salmon and spinach salad.

A couple of my roommates have quite the sensitive noses, and have made it clear that they dread the occasions when I'm feeling in the mood for salmon. So, it is much to their dismay that I have been on a salmon kick lately.

Though I don't consider myself a huge seafood lover, I do enjoy the taste and health benefits of salmon, as this fresh-water fish is high in protein, Omega-3 fatty acids, and Vitamin D.

A perfectly cooked salmon fillet is so tender that it falls apart at the touch of a fork and melts the moment it touches the tastebuds. Salmon is excellently complimented by spinach salad, with the honey dijon dressing adding a sweet touch to the fillet.

{ingredients}
1 oven-baked salmon fillet with herb and butter seasoning, spinach leaves, 1 sliced hard-boiled egg, red onion, crumbled feta cheese and low-fat Kraft honey dijon dressing
